Ingredients

  • 2 cups cooked rice
  • 1 cup cooked chicken, diced
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Heat sesame oil in a large skillet over medium heat.
  2. Add mixed vegetables and stir-fry until tender.
  3. Push the vegetables to one side and pour in the beaten eggs, scrambling until cooked.
  4. Add cooked chicken and rice to the skillet and mix together.
