A healthier version of traditional chicken katsu, made easy in an air fryer for a crispy texture without deep frying.

Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • Kosher salt
  • Freshly ground black pepper
  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 2 cups panko breadcrumbs

Instructions

  1. Preheat your air fryer to 350 degrees Fahrenheit.
  2. Slice each chicken breast in half width-wise to create four thin cutlets.
  3. Pound the chicken to about ¼ – ½” thick using a meat mallet.
  4. Season both sides of the chicken cutlets with kosher salt and freshly ground black pepper.
  5. Prepare three shallow bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs.
  6. Coat each chicken piece in flour, ensuring full coverage.
  7. Dip the floured chicken in the beaten egg until both sides are covered.
  8. Press the chicken into the panko breadcrumbs until well coated.
  9. Place the chicken in a single layer in the air fryer basket and cook for 10 minutes.
  10. Flip the chicken and cook for another 5 minutes until golden brown and chicken reaches an internal temperature of 160 degrees Fahrenheit.
  11. Repeat until all pieces are cooked, then serve while hot.

Notes

For extra crunch, ensure panko is packed on well. Serve with tonkatsu sauce, rice, or a salad.
