A delightful and comforting plum cake that marries the sweet, tart essence of ripe plums with rich, buttery undertones.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 cup plums, pitted and chopped
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a large mixing bowl, combine the melted butter and sugar, mixing well.
  3. Add the eggs and vanilla extract to the mixture and beat until smooth.
  4. Pour in the milk and stir gently until combined.
  5. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  7. Gently fold in the chopped plums.
  8. Pour the batter into the prepared cake pan and smooth the top. Bake for 35-40 minutes or until a toothpick comes out clean.
  9. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack.
