A quick and flavorful creamy Tuscan chicken dish that comes together in just 30 minutes, perfect for busy weeknights.

Ingredients

  • 2 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Fresh basil for garnish

Instructions

  1. Season chicken breasts with salt and pepper.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add chicken and cook for about 5-7 minutes on each side until golden and cooked through. Remove the chicken and set aside.
  4. In the same skillet, add garlic and sauté for about 30 seconds until fragrant.
  5. Add cherry tomatoes and cook for 2-3 minutes.
  6. Stir in fresh spinach until wilted.
  7. Pour in heavy cream and add Parmesan cheese and Italian seasoning. Stir until well combined.
  8. Return chicken to the skillet and coat with the creamy sauce. Simmer for a few minutes.
  9. Garnish with fresh basil and serve.

Notes

For meal prep, portion it out into containers for easy lunches during the week. Adjust garlic and cheese based on taste, and add red pepper flakes for spice.
