A quick and comforting dish featuring cheesy chicken and rice, perfect for busy weeknights.

Ingredients

  • 1 cup cooked rice
  • 1 cup cooked chicken, shredded
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup chicken broth
  • 1/2 cup broccoli florets (optional)
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add the cooked chicken and chicken broth, and stir until heated through.
  3. Stir in the cooked rice and garlic powder, mixing well.
  4. If using, add the broccoli and cook for another 3-4 minutes, until just tender.
  5. Remove from heat and stir in the shredded cheese until melted and combined.
  6. Season with salt and pepper to taste. Serve immediately, and enjoy every cheesy, savory bite!
