Apple Cider Pork with Mashed Sweet Potatoes

A delicious combination of pan-seared pork with a sweet apple cider sauce, served over creamy, cinnamon-kissed mashed sweet potatoes.

Ingredients

  • 4 pork chops
  • 1 cup apple cider
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 sweet potatoes, peeled and cubed
  • 2 tablespoons butter
  • Salt to taste
  • Black pepper to taste
  • 1 teaspoon ground cinnamon

Instructions

  1. Heat olive oil over medium heat in a skillet. Add pork chops and sear on both sides until browned, about 4-5 minutes per side.
  2. Remove the pork from the skillet. In the same pan, add chopped onion and minced garlic, sautéing until fragrant, around 2-3 minutes.
  3. Pour in the apple cider and stir to combine. Return the pork to the skillet and let it simmer gently for 8-10 minutes until cooked through.
  4. Peel and chop sweet potatoes into cubes. Boil in salted water until tender, about 15 minutes. Drain well.
  5. Transfer sweet potatoes back to the pot and add butter, salt, pepper, and cinnamon. Mash until creamy and smooth.
  6. Serve by placing a generous scoop of mashed sweet potatoes on each plate, topping with apple cider pork and drizzling with the sauce.

Notes

For creamier mashed sweet potatoes, add a splash of milk or cream and whisk after mashing.
