A delightful fusion of apple fritters and focaccia, featuring crispy edges and juicy apple filling, perfect for brunch or dessert.

Ingredients

  • 4 cups all-purpose flour
  • 1 packet (2 1/4 tsp) active dry yeast
  • 1 1/2 cups warm water (110°F)
  • 2 tbsp sugar
  • 1 tsp salt
  • 2 tbsp olive oil
  • 2 medium apples, peeled and diced
  • 1 tsp cinnamon
  • 1/4 cup brown sugar
  • 1 tbsp lemon juice
  • 1/4 cup powdered sugar
  • 12 tbsp milk (for glaze)
  • 1/4 cup chopped pecans (optional)

Instructions

  1. Activate the yeast by combining warm water, sugar, and yeast in a large bowl. Let sit for 5-10 minutes until frothy.
  2. Add flour, salt, and olive oil to the yeast mixture. Stir until a soft dough forms.
  3. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover with a damp cloth, and let it rise for about 1 hour, or until doubled in size.
  5. Prepare the apple filling by mixing diced apples, cinnamon, brown sugar, and lemon juice in a bowl.
  6. Preheat the oven to 375°F (190°C).
  7. Spread the risen dough onto a greased baking sheet, creating dimples with your fingers.
  8. Add the apple filling evenly over the dough, pressing gently into the surface.
  9. Bake for 25-30 minutes or until golden brown and apples are tender.
  10. Cool slightly, then drizzle a glaze made of powdered sugar and milk over the focaccia.

Notes

Serve warm or at room temperature. Pairs well with coffee or apple cider.
