Fluffy and flavorful pancakes made with yogurt and fresh apples, perfect for a wholesome breakfast.

  • 1 cup plain yogurt
  • 1 cup milk
  • 1 egg
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup diced apples
  • 1 teaspoon cinnamon
  • Butter or oil for cooking

Instructions

  1. Combine the dry ingredients: In a large bowl, mix together the flour, baking powder, baking soda, salt, and cinnamon.
  2. Whisk the wet ingredients: In another bowl, combine the yogurt, milk, egg, and sugar. Stir until well blended.
  3. Mix wet and dry ingredients: Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the diced apples.
  4. Heat the skillet: Heat a skillet over medium heat and add a little butter or oil.
  5. Cook the pancakes: Pour a ladleful of batter onto the skillet. Cook until bubbles form on the surface; then flip and cook until golden brown.
  6. Serve and enjoy: Serve warm with syrup or additional diced apples.

Notes

Leftover pancakes can be refrigerated for up to 3 days or frozen for up to 2 months. Reheat in a toaster or microwave.
