A vibrant, refreshing salad packed with crunchy vegetables and a delicious sesame dressing.

Ingredients

  • 2 cups chopped romaine lettuce
  • 1 cup shredded red cabbage
  • 1 cup shredded carrots
  • 1 cup chopped bell peppers (any color)
  • 1/2 cup sliced green onions
  • 1/2 cup chopped cilantro
  • 1/4 cup toasted sesame seeds
  • 1/4 cup slivered almonds
  • 1/2 cup edamame (optional)
  • 1/4 cup rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon honey or maple syrup (optional)
  • Salt and pepper to taste

Instructions

  1. Combine the fresh vegetables in a large bowl, including romaine, red cabbage, carrots, bell peppers, green onions, cilantro, sesame seeds, almonds, and optional edamame.
  2. Whisk together the dressing in a small bowl: rice vinegar, soy sauce, sesame oil, and optional honey or maple syrup.
  3. Pour the dressing over the salad and toss to combine, ensuring every piece is coated.
  4. Season with salt and pepper to taste and serve immediately, adjusting seasoning as needed.

Notes
