  • 4 chicken thighs or breasts
  • 1 cup pineapple chunks
  • 2 tablespoons jerk seasoning
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix together the jerk seasoning, olive oil, soy sauce, honey, lime juice, salt, and pepper in a bowl.
  3. Coat the chicken pieces in the marinade and let them sit for at least 30 minutes.
  4. Arrange the marinated chicken in a baking dish and scatter the pineapple chunks on top.
  5. Bake for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
