Delightful muffins made with ripe bananas and cake mix, perfect for breakfast or snacks.

Ingredients

  • 5 large overripe bananas, brown
  • 1/3 cup vegetable oil (or canola)
  • 3 large eggs
  • 1 box cake mix (carrot or spice)

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit.
  2. Mash the bananas until they’re slightly chunky.
  3. Combine the cake mix, vegetable oil (or canola), and eggs in another bowl.
  4. Fold in the mashed bananas to the dry mix until just combined.
  5. Add optional chopped nuts or mini chocolate chips if desired.
  6. Spoon the batter into muffin liners, filling them about 3/4 full.
  7. Bake for about 18 minutes.
  8. Cool the muffins on a rack before serving.

Notes

Store leftovers in an airtight container for up to 3 days at room temperature, or up to a week in the fridge. Can be frozen for up to 3 months.
