A delightful banana bread recipe infused with love and nostalgia, perfect for breakfast or dessert.

Ingredients

  • 1 ½ cups mashed very ripe bananas (about 4 medium bananas)
  • 2 large eggs
  • ½ cup unsalted butter, melted (or ½ cup neutral oil)
  • ¾ cup granulated sugar (plus more for topping)
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon kosher salt
  • 1 ½ cups (210 g) all-purpose flour
  • Optional: 3/4 cup semi-sweet chocolate chips or 1/2 cup chopped nuts

Instructions

  1. Preheat the oven to 350°F (175°C). Butter a 9 x 5″ loaf pan and line it with parchment paper on two sides for easy removal later.
  2. Mash the bananas until smooth.
  3. Add the eggs to the mashed bananas and whisk until well combined.
  4. Pour in the melted butter and mix in the granulated sugar and vanilla extract.
  5. Mix together the baking soda, cinnamon, and kosher salt in another bowl, then gradually add to the wet mixture.
  6. Fold in the all-purpose flour until just combined.
  7. Add chocolate chips or chopped nuts if desired.
  8. Pour the batter into the prepared loaf pan and sprinkle additional toppings on top if desired.
  9. Place the loaf pan in the oven and bake for 55 to 60 minutes, until a toothpick comes out with a few crumbs.
  10. Allow the banana bread to cool in the pan for 15 minutes.
  11. Slice and enjoy warm or at room temperature!

Notes

Store wrapped in plastic wrap or an airtight container at room temperature for up to 3 days. For longer storage, freeze wrapped slices for up to 3 months.
