Delicious and moist muffins made with ripe bananas and crunchy walnuts, perfect for breakfast or a snack.

  • 3 ripe bananas, mashed
  • 1/2 cup brown sugar
  • 1/2 cup toasted walnuts, chopped
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a muffin tin or line with muffin liners.
  2. Mash the ripe bananas in a large bowl until smooth. Stir in the brown sugar.
  3. Add the vegetable oil, egg, and vanilla extract. Mix until smooth.
  4. In another bowl, whisk together the flour, baking soda, cinnamon, and salt.
  5. Gradually add the dry ingredients to the banana mixture, stirring gently until just combined.
  6. Fold in the chopped walnuts.
  7. Divide the batter among the muffin cups, filling each about 2/3 full.
  8. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  9. Let the muffins cool for a few minutes before transferring them to a wire rack.

Notes

For best results, use overripe bananas and toast the walnuts beforehand. Feel free to experiment with different nuts or add-ins.
