A comforting dessert featuring caramelized bananas under a fluffy cobbler topping, perfect for gatherings or cozy nights in.

  • 4 ripe bananas
  • 1/2 cup brown sugar
  • 1/4 cup unsalted butter
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/2 cup chopped pecans (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, melt the butter over medium heat.
  3. Add the brown sugar, cinnamon, and vanilla to the melted butter, stirring until combined.
  4. Slice the bananas and add them to the skillet, cooking until they soften.
  5. In a mixing bowl, combine the flour, sugar, baking powder, and salt.
  6. Pour in the milk and mix until just combined.
  7. Pour the batter into a greased baking dish.
  8. Spoon the caramelized banana mixture over the batter.
  9. Sprinkle chopped pecans on top if desired.
  10. Bake for 25-30 minutes or until golden brown.
  11. Serve warm, optionally with vanilla ice cream.
