  • 1 pound boneless chicken breasts
  • 1 cup cornstarch
  • 2 eggs
  • 1 cup panko breadcrumbs
  • Oil for frying
  • 1/2 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Prepare the chicken by cutting it into bite-sized pieces and seasoning with salt and pepper.
  2. Set up your breading station with bowls for cornstarch, beaten eggs, and panko breadcrumbs.
  3. Bread the chicken by dipping each piece first in cornstarch, then in egg, and finally coating with panko breadcrumbs.
  4. Fry the chicken in hot oil until golden brown, about 5-7 minutes per batch.
  5. Whip up the Bang Bang sauce by mixing mayonnaise, sweet chili sauce, sriracha, and garlic powder.
  6. Coat the fried chicken pieces in the sauce until evenly covered.
  7. Garnish with sliced green onions and serve immediately.

Store leftovers in an airtight container for up to 3 days. Reheat in the oven to maintain crispiness.
