Juicy, spicy, and perfectly charred chicken skewers served with a creamy, tangy sauce, perfect for summer gatherings.

  • 1 lb chicken breast, cut into cubes
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 2 tbsp sriracha
  • 2 tbsp lime juice
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • Skewers (wooden or metal)
  • Chopped green onions (for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. Create the Flavorful Sauce: In a large bowl, mix together 1/2 cup mayonnaise, 1/4 cup sweet chili sauce, 2 tablespoons of sriracha, 2 tablespoons of lime juice, 1 teaspoon garlic powder, and 1/2 teaspoon salt until smooth.
  2. Coat the Chicken: Add the cubed chicken to the bowl and toss it thoroughly to ensure every piece is coated in the sauce.
  3. Assemble the Skewers: Thread the coated chicken onto your skewers, packing them tightly for even cooking.
  4. Preheat for Perfection: Preheat your grill or grill pan over medium heat.
  5. Grill to Juicy Perfection: Place the skewers on the grill and cook them for about 5-7 minutes on each side or until cooked through.
  6. Serve and Garnish: Serve the skewers hot from the grill, drizzled with any remaining sauce, and topped with chopped green onions and sesame seeds.

Notes

Marinate longer for enhanced flavor. If no grill, sauté in a pan.
