A quick and flavorful dish featuring fluffy rice, colorful mixed vegetables, and a hint of spice from sriracha.

Ingredients

  • 2 cups cooked rice
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon sriracha (or to taste)
  • 2 green onions, chopped
  • 1 egg (optional)
  • Salt and pepper to taste

Instructions

  1. Heat the oil in a large skillet over medium heat until it shimmers.
  2. Add the mixed vegetables to the skillet and stir-fry for about 2-3 minutes.
  3. Push the vegetables to one side of the skillet and crack the egg into the empty space. Scramble until cooked, then mix everything together.
  4. Add the cooked rice, soy sauce, and sriracha to the skillet. Stir well to combine.
  5. Season with salt and pepper to taste.
  6. Cook for another 2-3 minutes until everything is heated through.
  7. Garnish with chopped green onions before serving.

Notes

Use day-old rice for the best texture. You can adjust the spice level to your preference.
