A fragrant, tender, and spicy barbacoa beef dish that brings comfort and flavor to any table.

Ingredients

  • 3 pounds beef chuck roast
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 23 chipotle peppers in adobo sauce
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup apple cider vinegar
  • 1/2 cup beef broth
  • 1 lime, juiced
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add chopped onion and sauté until translucent. Stir in garlic and cook for an additional 1 minute.
  2. Add the beef roast to the pot and sear on all sides.
  3. In a blender, combine chipotle peppers, cumin, oregano, salt, pepper, vinegar, beef broth, and lime juice. Blend until smooth.
  4. Pour the sauce over the beef in the pot. Cover and cook on low heat for 6-8 hours, or until the beef is tender and shreddable.
  5. Shred the beef with two forks, then stir it back into the sauce.
  6. Serve with warm tortillas, and garnish with fresh cilantro.

Notes

Searing the beef adds layers of flavor. Let the beef cook low and slow for the best tenderness.
