Hearty BBQ chicken bowls filled with fluffy rice, tender chicken, and colorful veggies, perfect for any occasion.

Ingredients

  • 2 cups cooked rice
  • 2 cups shredded cooked chicken
  • 1 cup BBQ sauce
  • 1 cup corn (canned or frozen)
  • 1 cup black beans (cooked or canned)
  • 1 cup diced bell pepper
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 avocado, sliced (optional)
  • Fresh cilantro, for garnish

Instructions

  1. Combine rice and chicken in a large bowl.
  2. Add the BBQ sauce over the chicken and rice, mixing until well combined.
  3. Layer the BBQ chicken mixture in serving bowls with corn, black beans, and diced bell pepper.
  4. Top each bowl with shredded cheese and sliced avocado if desired.
  5. Garnish with fresh cilantro before serving. Enjoy!

Notes

Feel free to use rotisserie chicken to save time. Leftover rice works wonders here, but freshly cooked rice is also great!
