A delightful BBQ Chicken Quinoa Bowl featuring grilled chicken glazed in BBQ sauce, served over fluffy quinoa and black beans.

Ingredients

  • 1½ lbs chicken breast
  • 1 tbsp olive oil
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • Salt & pepper, to taste
  • ½ cup BBQ sauce
  • 1 cup dry quinoa
  • 1 cup black beans, rinsed & drained

Instructions

  1. Preheat the grill or oven to medium heat.
  2. Mix the olive oil, smoked paprika, garlic powder, salt, and pepper in a bowl. Coat the chicken breasts with this mixture.
  3. Place the chicken on the grill or in the oven and cook for 6-7 minutes per side, basting with BBQ sauce during the last few minutes.
  4. Prepare the quinoa according to package instructions until fluffy.
  5. Layer the bowls starting with quinoa, adding black beans, and topping with BBQ chicken slices.

Notes

For extra crunch, consider adding chopped nuts or seeds on top just before serving.
