A comforting bowl of rich beef barley soup, perfect for chilly nights and family gatherings.

Ingredients

  • 1 lb beef (cubed)
  • 1 cup pearl barley
  • 1 onion (chopped)
  • 2 carrots (diced)
  • 2 celery stalks (diced)
  • 3 cloves garlic (minced)
  • 6 cups beef broth
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions

  1. Brown the beef in a large pot over medium heat until browned on all sides.
  2. Sauté the onion, carrots, celery, and garlic until the vegetables are soft.
  3. Stir in the pearl barley, beef broth, and bay leaf.
  4. Bring to a boil, then reduce heat and let simmer for 1 hour.
  5. Season with salt and pepper to taste.
  6. Remove the bay leaf and garnish with fresh parsley before serving.

Notes

For a richer flavor, add a splash of red wine before simmering. Leftovers can be stored in the fridge for up to 3 days or frozen for 3 months.
