Crispy, golden chimichangas filled with tender shredded beef, creamy cheese, and savory refried beans, perfect for family dinners or casual parties.

  • 2 cups shredded beef
  • 1 cup shredded cheese
  • 1/2 cup refried beans
  • 4 large flour tortillas
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Oil for frying
  • Sour cream and salsa for serving

Instructions

  1. Combine the shredded beef with the cheese, refried beans, chili powder, cumin, salt, and pepper in a bowl. Mix well until everything is beautifully incorporated.
  2. Lay a tortilla on a flat surface and place a portion of the beef mixture in the center. Allow enough space around the edges to seal the chimichanga properly.
  3. Fold in the sides of the tortilla, then roll it tightly from one end to the other to enclose the filling securely.
  4. Heat oil in a large frying pan over medium heat until hot enough that a small piece of tortilla sizzles when added.
  5. Fry each chimichanga in the hot oil until they turn a lovely golden brown on all sides, which should take about 5 minutes.
  6. Remove the chimichangas from the oil and let them drain on paper towels.
  7. Serve your chimichangas hot with a side of sour cream and salsa.

Notes

For extra crunch, consider using a blend of oils. You can also bake the chimichangas at 400°F (200°C) for 20-25 minutes instead of frying.
