  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup elbow macaroni
  • Salt and pepper to taste
  • Optional: parsley for garnish

Instructions

  1. Browning the Beef: In a large pot, brown the ground beef over medium heat. Drain excess fat.
  2. Sautéing the Vegetables: Add the chopped onion, carrots, celery, and garlic. Cook until the veggies are soft.
  3. Combining Broth and Tomatoes: Pour in the beef broth and the can of diced tomatoes; bring to a boil.
  4. Mixing in the Elbow Macaroni: Stir in the elbow macaroni and reduce the heat. Simmer for about 10 minutes.
  5. Seasoning the Soup: Season with salt and pepper to taste.
  6. Serving the Soup: Serve hot, garnished with parsley if desired.
