A comforting and hearty beef and macaroni soup, rich in flavors and perfect for chilly evenings.

  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 can diced tomatoes
  • 1 cup macaroni
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Brown the ground beef in a large pot over medium heat, breaking it apart until cooked through.
  2. Sauté the diced onion, carrots, celery, and minced garlic until softened, about 5 minutes.
  3. Combine the beef broth and diced tomatoes, bringing to a gentle boil.
  4. Cook the macaroni in the bubbling pot until tender, about 8-10 minutes, stirring occasionally.
  5. Season the soup with salt and pepper to taste and serve, garnished with fresh parsley.

Notes

For a thicker soup, add more macaroni or a tablespoon of cornstarch mixed with water during cooking. This soup also freezes well for up to 2 months.
