A warm, comforting beef and potato casserole layered with flavors of rich beef, creamy potatoes, and gooey melted cheese.

  • 4 cups mashed potatoes
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
  • 1 cup mixed vegetables (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Brown the ground beef in a skillet over medium heat, draining excess fat.
  3. Add diced onions and minced garlic; sauté until soft.
  4. Stir in beef broth, salt, pepper, and Italian seasoning; simmer for 5 minutes.
  5. Mix in the optional mixed vegetables.
  6. Layer the beef mixture in a greased baking dish, followed by mashed potatoes.
  7. Sprinkle shredded cheese on top.
  8. Bake for 25-30 minutes until cheese is melted and bubbly.
  9. Let cool for a few minutes before serving.

Notes

For extra flavor, consider using homemade mashed potatoes. You can make it lighter with ground turkey or chicken. Store leftovers in an airtight container for up to 3 days.
