Comforting Beef Enchiladas filled with savory ground beef, black beans, and gooey melted cheese, topped with enchilada sauce.

Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cups enchilada sauce
  • 8 flour tortillas
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 can black beans, drained
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Sauté the ground beef with the chopped onion until the meat is cooked through. Season with chili powder, cumin, salt, and pepper.
  3. Add black beans to the beef mixture and stir to combine.
  4. Spread a small amount of enchilada sauce in the bottom of a baking dish.
  5. Place a tortilla on a flat surface, fill it with the beef and bean mixture, and sprinkle with cheese. Roll it tightly and place seam-side down in the baking dish. Repeat with the remaining tortillas.
  6. Pour the rest of the enchilada sauce over the rolled tortillas and sprinkle with remaining cheese.
  7. Bake for 20-25 minutes until the cheese is melted and bubbly.
  8. Serve hot with sour cream or guacamole if desired.

Notes

Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 3 months. Reheat at 350°F until heated through.
