A vibrant and hearty dish combining ground beef and fresh zucchini, perfect for weeknight dinners.

Ingredients

  • 1 pound ground beef
  • 2 medium zucchinis, sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can diced tomatoes (14.5 oz)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Sauté the diced onion and minced garlic until softened, about 3-4 minutes.
  3. Brown the ground beef, breaking it apart, until nicely browned, about 5-7 minutes.
  4. Cook the bell pepper and sliced zucchini until tender, about 5 minutes.
  5. Combine with the diced tomatoes and sprinkle with Italian seasoning.
  6. Season with salt and pepper, then let simmer for 5-10 minutes.
  7. Serve hot with fresh herbs on top, if desired.
