Birria Tacos

Authentic and flavorful birria tacos made with tender beef and aromatic spices, served with fresh garnishes and dipping broth.

Ingredients

  • 2 lbs beef chuck or short ribs
  • 3 dried guajillo chiles
  • 3 dried ancho chiles
  • 2 cloves garlic
  • 1 onion, quartered
  • 2 bay leaves
  • 1 tsp cumin
  • 1 tsp oregano
  • Salt to taste
  • Corn tortillas
  • Chopped onion and cilantro for garnish
  • Lime wedges

Instructions

  1. Boil the beef with enough water to cover it. Add guajillo and ancho chiles, garlic, quartered onion, bay leaves, cumin, oregano, and salt. Simmer until the meat is tender, about 90 minutes.
  2. Shred the meat using two forks once it cools slightly, saving the broth for later.
  3. Warm the corn tortillas one at a time in a medium heat pan until soft and pliable.
  4. Fill the tortillas generously with the shredded beef.
  5. Serve each taco dipped into the saved broth, topped with chopped onions, cilantro, and lime wedges.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. For longer storage, freeze the broth and meat for up to 3 months.
