Delightful muffins filled with creamy cheesecake and bursting with fresh blueberries, perfect for breakfast or a sweet snack.

  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup buttermilk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • 4 oz cream cheese, softened
  • 2 tablespoons powdered sugar

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. Combine the flour, sugar, baking powder, baking soda, and salt in a mixing bowl.
  3. Whisk together the buttermilk, vegetable oil, egg, and vanilla extract in another bowl.
  4. Pour the wet mixture into the dry ingredients and mix gently until just combined.
  5. Fold in the fresh blueberries.
  6. Mix the softened cream cheese with powdered sugar until smooth.
  7. Fill each muffin cup halfway with batter, add a dollop of cream cheese filling, then cover with more batter until 3/4 full.
  8. Bake for 18-20 minutes, or until a toothpick comes out clean.
  9. Cool slightly in the pan before transferring to a wire rack.
