Delicate and creamy cheesecake bars swirled with fresh blueberries and jam, bringing a delightful mix of tang and sweetness.

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1 cup fresh blueberries
  • 1/4 cup blueberry jam

Instructions

  1. Preheat your oven to 325°F (163°C) and grease a 9×9-inch pan.
  2. Mix graham cracker crumbs with the melted butter until it resembles wet sand. Press into the bottom of the prepared pan.
  3. Beat the cream cheese and granulated sugar together until smooth and creamy.
  4. Add the vanilla extract and eggs one at a time, mixing well after each addition.
  5. Stir in the sour cream until well combined.
  6. Spread half of the cheesecake mixture over the crust.
  7. Combine the fresh blueberries and blueberry jam in a separate bowl.
  8. Drizzle the blueberry mixture over the cheesecake layer.
  9. Pour the remaining cheesecake mixture on top and swirl with a knife.
  10. Bake for 45-50 minutes, until the edges are set with a slight jiggle in the center.
  11. Cool completely at room temperature, then refrigerate for at least 4 hours.

Notes

Serve with whipped cream or a sprinkle of extra blueberries. Store leftovers in an airtight container in the refrigerator for up to one week.
