Experience the rich, savory flavors of homemade Birria Tacos, filled with tender beef and aromatic spices.

  • 2 lbs beef chuck roast
  • 2 lbs beef short ribs
  • 4 dried guajillo chiles
  • 2 dried ancho chiles
  • 4 cloves garlic
  • 1 onion, chopped
  • 2 tsp ground cumin
  • 2 tsp dried oregano
  • 1 tsp paprika
  • 4 cups beef broth
  • Salt and pepper to taste
  • Corn tortillas
  • Chopped onions and cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Toast and soak chiles by toasting the guajillo and ancho chiles in a dry pan over medium heat for 2-3 minutes. Then, immerse them in hot water and soak for 15 minutes.
  2. Blend the flavor base by combining the soaked chiles, garlic, chopped onion, cumin, oregano, paprika, and some soaking water in a blender. Blend until smooth.
  3. Sear the meats in a large pot over medium-high heat until browned on all sides.
  4. Combine the chile paste and beef broth in the pot, seasoning generously with salt and pepper.
  5. Simmer gently on low heat for about 3 hours until the meat is tender.
  6. Shred the meat using two forks and return it to the broth.
  7. Prepare the tortillas by warming them in a separate skillet until pliable.
  8. Assemble your tacos by filling each tortilla with shredded beef, garnishing with chopped onions and cilantro, and serving with lime wedges.

Notes

For deeper flavor, sear the beef in batches. Use gluten-free corn tortillas for gluten-free tacos.
