Ingredients

Scale
  • 2 cups all-purpose flour
  • 2 cups sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 jar (24 ounces) Morello cherries
  • 2 cups heavy whipping cream
  • 3 tablespoons powdered sugar
  • Chocolate shavings (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large mixing bowl.
  3. Add in the eggs, milk, vegetable oil, and vanilla to the dry ingredients. Beat on medium speed for about 2 minutes.
  4. Carefully stir in the boiling water.
  5. Pour the batter evenly into the prepared cake pans.
  6. Bake for 30-35 minutes, or until a toothpick comes out clean.
  7. Cool the cakes in the pans for about 10 minutes before transferring them to wire racks to cool completely.
  8. Slice each cake in half horizontally.
  9. Drain the Morello cherries and reserve the juice.
  10. Whip the heavy cream with powdered sugar until stiff peaks form.
  11. Begin assembling the cake by placing the first layer on a serving plate, drizzling with cherry juice, layering cherries, and topping with whipped cream. Repeat.
  12. Top with the final layer, using remaining whipped cream to cover the cake.
  13. Chill the completed cake for at least an hour before serving.
