  • 1 lb shrimp, peeled and deveined
  • 2 tablespoons blackening seasoning
  • 4 cups mixed greens
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat a skillet over medium-high heat.
  2. Toss the shrimp with blackening seasoning until fully coated.
  3. Cook the shrimp in the preheated skillet for 2-3 minutes on each side until blackened and opaque.
  4. Combine the mixed greens, avocado, cherry tomatoes, and red onion in a large bowl.
  5. Whisk together olive oil, lemon juice, salt, and pepper to make the dressing.
  6. Add the cooked shrimp to the salad and drizzle with the dressing.
