A vibrant and satisfying stir fry that celebrates fresh ingredients and outdoor cooking.

Ingredients

  • 1 lb tender beef (sliced thin)
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots, etc.)
  • 1/4 cup soy sauce
  • 2 tablespoons olive oil
  • 2 cloves garlic (minced)
  • 1 tablespoon ginger (grated)
  • Salt and pepper to taste
  • Cooked rice or noodles for serving

Instructions

  1. Heat olive oil in a large skillet or on a Blackstone griddle over medium-high heat.
  2. Add the sliced beef and cook until browned, about 3-4 minutes.
  3. Add minced garlic and grated ginger, stirring for 1 minute.
  4. Toss in the mixed vegetables and continue cooking until they are tender, about 5-7 minutes.
  5. Pour in the soy sauce, and season with salt and pepper to taste.
  6. Stir everything together until well combined and heated through.
  7. Serve hot over cooked rice or noodles.

Notes

For added flavor, garnish with sesame seeds or sliced green onions. Leftovers can be stored in an airtight container for 3-4 days.
