  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1/2 cup fresh blood orange juice
  • Zest of 2 blood oranges
  • 1/2 cup buttermilk
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • Powdered sugar for glazing or cream cheese frosting for topping

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a 9-inch round cake pan.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, mixing well after each addition.
  4. Stir in the blood orange juice, zest, and vanilla extract.
  5. In a separate bowl, whisk together the flour, baking powder, and salt.
  6. Gradually add the dry mixture to the wet mixture, alternating with the buttermilk.
  7. Pour the batter into the prepared cake pan and smooth the top.
  8. Bake for 30-35 minutes or until a toothpick inserted comes out clean.
  9. Cool in the pan for about 10 minutes, then transfer to a wire rack.
  10. Once cooled, glaze with powdered sugar or top with cream cheese frosting.

Notes

For the best flavor, use fresh blood oranges instead of bottled juice. Adjust the glaze sweetness according to preference.
