A simple yet scrumptious BLT Pasta Salad capturing all the classic flavors of a bacon, lettuce, and tomato sandwich in a delightful pasta dish.

  • 8 oz rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cooked bacon, chopped
  • 1 cup romaine lettuce, chopped
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Cook the Pasta: Bring a pot of salted water to a boil and cook the rotini pasta according to package instructions, about 8-10 minutes. Once cooked, drain and let it cool.
  2. Combine the Fresh Ingredients: In a large bowl, combine the cooled rotini pasta, halved cherry tomatoes, chopped bacon, and crispy romaine lettuce. Mix gently to avoid wilting the lettuce.
  3. Whisk Together the Dressing: In a small bowl, whisk together the mayonnaise, Dijon mustard, salt, and pepper.
  4. Coat the Pasta Salad: Pour the dressing over the pasta salad and toss until well coated.
  5. Chill and Serve: Chill the salad in the refrigerator for at least 30 minutes before serving.

Notes

Store leftovers in an airtight container for up to three days. Add a splash of mayonnaise or olive oil if the pasta absorbs the dressing.
