  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 6 ounces dark chocolate, chopped
  • 1 tablespoon coconut oil

Instructions

  1. In a blender or food processor, puree the blueberries until smooth. If you prefer a seedless filling, strain the puree to remove any seeds.
  2. In a bowl, beat the softened butter with an electric mixer until creamy. Gradually add the powdered sugar, vanilla extract, and salt, mixing until the mixture is smooth and fluffy.
  3. Gently fold the blueberry puree into the buttercream mixture until everything is well combined.
  4. Chill the buttercream in the refrigerator for about 30 minutes. This helps firm it up, making it easier to pipe into the chocolate shells.
  5. Melt the dark chocolate and coconut oil together in a microwave-safe bowl or using a double boiler, stirring until the mixture is smooth and silky.
  6. Pour a layer of melted chocolate into each mold, ensuring the bottom is covered. Let it set slightly in the fridge.
  7. Once the chocolate has set but is not fully hard, pipe or scoop the blueberry buttercream filling into the chocolate shells, filling them generously.
  8. Top with more melted chocolate to seal the chocolates completely. Make sure they are well-covered so the buttercream is hidden inside.
