Fluffy and moist pancakes made with tangy buttermilk and bursting with juicy blueberries, perfect for a delightful breakfast.

Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 cup fresh or frozen blueberries
  • Butter or oil for cooking

Instructions

  1. Whisk the dry ingredients in a bowl: flour, sugar, baking powder, baking soda, and salt.
  2. Mix the wet ingredients in another bowl: buttermilk, egg, and melted butter.
  3. Combine the wet and dry ingredients gradually until just blended; gently fold in the blueberries.
  4. Heat a skillet over medium heat and add butter or oil.
  5. Pour 1/4 cup of batter for each pancake onto the skillet.
  6. Cook until bubbles form on the surface, then flip and cook until golden brown.
  7. Serve warm with maple syrup or your choice of toppings.

Notes
