Delicious and nutritious Blueberry Cheesecake Protein Bites, perfect for a quick on-the-go snack.

Ingredients

  • 1 cup rolled oats
  • 1 cup almond flour
  • 1/2 cup vanilla protein powder
  • 1/2 cup cream cheese, softened
  • 1/4 cup honey or maple syrup
  • 1/2 cup fresh blueberries
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon lemon juice
  • Pinch of salt

Instructions

  1. In a large mixing bowl, combine rolled oats, almond flour, and protein powder.
  2. In another bowl, mix cream cheese, honey (or maple syrup), vanilla extract, lemon juice, and salt until smooth.
  3. Combine the wet and dry ingredients thoroughly, and gently fold in the fresh blueberries.
  4. Chill the mixture in the refrigerator for about 30 minutes to make it easier to handle.
  5. Once chilled, roll the mixture into small bite-sized balls.
  6. Store in an airtight container in the refrigerator for up to a week.

Notes

Feel free to use frozen blueberries and adjust sweetness according to your taste. These bites can also be made vegan by using vegan cream cheese.
