A moist and delicious bread filled with blueberries and cream cheese, perfect for breakfast or a snack.

  • 1 cup cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan to prevent sticking.
  2. Beat together the softened cream cheese and butter until smooth.
  3. Add the sugar and continue to beat until well combined.
  4. Mix in the eggs one at a time, followed by the vanilla extract.
  5. Whisk together the flour, baking powder, and salt in a separate bowl.
  6. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
  7. Fold in the blueberries, ensuring they’re evenly distributed.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Bake for 50-60 minutes or until a toothpick comes out clean.
  10. Allow the bread to cool in the pan for about 10 minutes before transferring to a wire rack.
