A refreshing and healthy treat that encapsulates the essence of summer with creamy Greek yogurt and fresh blueberries.

  • 1 cup fresh blueberries
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • Small silicone molds or ice cube trays

Instructions

  1. Mix the Base: In a mixing bowl, combine the Greek yogurt with honey (or maple syrup), vanilla extract, and lemon juice. Mix until everything is beautifully incorporated.
  2. Fold in the Blueberries: Gently fold in the fresh blueberries, taking care not to squish them. You want to keep those lovely bursts of flavor intact!
  3. Spoon into Molds: Spoon the yogurt mixture into small silicone molds or ice cube trays, filling each section all the way to the top.
  4. Freeze Until Solid: Place the molds in the freezer and let them freeze for about 120-180 minutes, or until they are completely solid.
  5. Pop and Store: Once frozen, carefully pop the yogurt bites out of the molds. Store them in a resealable bag or airtight container in the freezer.
