  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh blueberries
  • Zest of 1 lemon
  • Juice of 1 lemon

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking pan with parchment paper.
  2. Mix melted butter and brown sugar until thoroughly combined.
  3. Add eggs and vanilla extract, whisking until smooth.
  4. Combine flour, baking powder, and salt in another bowl.
  5. Merge the dry ingredients with the wet ingredients, mixing until just combined.
  6. Fold in blueberries, lemon zest, and lemon juice.
  7. Prepare the batter in the prepared pan, spreading it evenly.
  8. Bake for 25-30 minutes until a toothpick comes out clean.
  9. Cool in the pan before cutting into squares.
