A delightful snack combining the flavors of blueberry, lemon, and creamy cheesecake in a fun puppy chow treat.

Ingredients

  • 4 cups rice cereal
  • 1 cup white chocolate chips
  • 1/2 cup cream cheese, softened
  • 1/2 cup blueberry puree
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 cup powdered sugar

Instructions

  1. Melt the white chocolate chips in a large bowl in the microwave until smooth, about 30 seconds at a time, stirring in between.
  2. Whisk together the softened cream cheese with the melted chocolate until well combined. Add in the blueberry puree, lemon juice, and lemon zest.
  3. Fold the rice cereal into the creamy blueberry mixture until every piece is coated.
  4. Coat the mixture with powdered sugar by adding it to a zip-top bag, adding the cereal, and shaking until covered.
  5. Cool the mixture on a parchment-lined baking sheet, then serve in a bowl or package it as a gift.

Notes

Ensure cream cheese is softened for easy mixing. For a blueberry puree, blend fresh or frozen blueberries until smooth. Store leftovers in an airtight container for up to 5 days, or freeze for up to a month.
