Deliciously fluffy blueberry muffins bursting with juicy blueberries, perfect for breakfast or as a snack.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. Whisk together the flour, sugar, salt, baking powder, and baking soda in a large bowl.
  3. Mix the milk, vegetable oil, and egg in another bowl until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  5. Fold in the blueberries carefully, ensuring they are evenly distributed.
  6. Fill the muffin cups about 2/3 full with the batter.
  7. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  8. Let them cool for a few minutes before transferring to a wire rack.

Notes

For added flavor, sprinkle some lemon zest or nuts into the batter. These muffins can be frozen for up to three months.
