Delicious blueberry scones that are flaky and tender, perfect for breakfast or a cozy afternoon treat.

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup fresh blueberries
  • 1/2 cup milk
  • 1 egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Whisk until blended.
  3. Add the cold, cubed butter into the mixture. Mix until it resembles coarse crumbs.
  4. Gently fold in the blueberries being careful not to crush them.
  5. In a separate bowl, whisk together the milk, egg, and vanilla extract until smooth.
  6. Pour the wet ingredients into the dry mixture and combine until just mixed.
  7. Turn the dough out onto a floured surface and knead gently just until it holds together.
  8. Pat the dough into a circle about 1 inch thick, cut into wedges and place on the baking sheet.
  9. Bake for 15-20 minutes or until golden brown.
  10. Cool on a wire rack before serving.

Notes

Fresh blueberries are key for the best flavor. Don’t overmix to keep scones tender.
