A comforting bowl of pasta drenched in a rich Bolognese sauce with robust flavors and hearty textures.

  • 400g pasta
  • 250g Italian sausage
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 400g canned tomatoes
  • 1 cup red wine
  • Salt and pepper to taste
  • Olive oil
  • Parmesan cheese, for serving

Instructions

  1. Cook the pasta according to package instructions until al dente, salting the water generously.
  2. In a large skillet, heat a splash of olive oil over medium heat. Add onion, garlic, carrot, and celery. Sauté until soft and fragrant, about 5 minutes.
  3. Add the Italian sausage, breaking it apart with a spoon. Cook until browned and no longer pink.
  4. Pour in the red wine, letting it reduce for a few minutes.
  5. Stir in the canned tomatoes and a pinch of salt and pepper. Simmer for about 30 minutes.
  6. Drain the pasta and toss it into the skillet with the Bolognese sauce, mixing well to coat.
  7. Plate the pasta and top generously with freshly grated Parmesan cheese.

Notes

For extra depth, add a bay leaf while simmering the sauce and taste to adjust seasonings to personal preference.
