A comforting and rich Bolognese sauce that brings together family over hearty pasta.

Ingredients

  • 1 lb Italian sausage
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 can (28 oz) crushed tomatoes
  • 1 cup red wine
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish
  • Pasta of choice

Instructions

  1. Sauté the vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion, carrot, celery, and minced garlic. Sauté until softened, about 5 minutes.
  2. Brown the Italian sausage: Add the sausage and break it apart. Cook until browned, about 6-8 minutes.
  3. Pour in the red wine: Let it reduce for a few minutes, scraping the bottom of the pot.
  4. Combine with crushed tomatoes: Stir in the crushed tomatoes, season with salt and pepper, and simmer for about 30 minutes.
  5. Cook the pasta: Prepare your pasta according to package instructions.
  6. Serve with garnish: Ladle the sauce over the pasta and garnish with fresh basil or parsley.

Notes

For a richer sauce, consider adding minced mushrooms or a splash of cream. Pair with rustic bread and a side salad.
