Ingredients

Scale
  • 1 ½ cups chocolate cookie crumbs
  • ½ cup unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 3 large eggs
  • ½ cup sour cream
  • ½ cup chocolate chips
  • 1 cup heavy cream
  • 8 ounces semisweet chocolate, chopped

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Combine chocolate cookie crumbs and melted butter in a mixing bowl. Press the mixture into the bottom of a springform pan to form the crust.
  3. Beat cream cheese and sugar until smooth in a large bowl. Add vanilla and mix well.
  4. Add eggs one at a time, mixing well after each addition. Stir in sour cream until combined.
  5. Pour half of the cheesecake batter over the crust. Swirl in melted chocolate, then top with the remaining batter.
  6. Bake for 55-60 minutes, until set. Let it cool completely.
  7. Heat heavy cream and pour it over chopped chocolate. Stir until smooth to make the ganache.
  8. Pour ganache over cooled cheesecake and sprinkle with chocolate chips.
  9. Chill in the refrigerator for at least 4 hours before serving.

Notes

Ensure cream cheese is at room temperature for easy mixing. Don’t rush the cooling process!
