Delicious breakfast tacos filled with fluffy scrambled eggs, black beans, and topped with cheese and avocado.

Ingredients

  • Corn tortillas
  • Eggs
  • Cheddar cheese (grated)
  • Black beans (cooked)
  • Avocado (sliced)
  • Salsa
  • Salt
  • Pepper
  • Olive oil

Instructions

  1. Heat the olive oil in a skillet over medium heat.
  2. Scramble the eggs in a bowl, whisk with salt and pepper, then pour into the skillet.
  3. Warm the corn tortillas in another pan for about a minute on each side.
