A quick and wholesome pasta dish that combines earthy flavors of whole wheat pasta and chickpeas with vibrant broccoli.

Ingredients

  • 8 oz whole wheat or gluten-free pasta
  • 1 cup broccoli florets
  • 1 can chickpeas, drained and rinsed
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional)
  • Lemon juice (optional)

Instructions

  1. Cook the pasta according to package instructions in salted boiling water; add broccoli in the last 3 minutes.
  2. Sauté the garlic in olive oil over medium heat for about 1 minute.
  3. Add the chickpeas to the skillet and heat for 3-4 minutes.
  4. Combine the drained pasta and broccoli with the garlic and chickpeas, tossing gently.
  5. Season with salt, pepper, and optional lemon juice before serving topped with Parmesan.

Notes

For a gluten-free version, use suitable pasta. Leftovers can be stored in an airtight container for up to 3 days.
